The wine
De Chanceny is emblematic of our know-how in producing fine, sparkling Loire wines according to the Méthode Traditionnelle, developed since 1953.
Terroir
The vines sink their roots deep into a clay-limestone soil where the tuffa is quite shallow. This terroir is well-adapted to naturally regulate water supply and early ripening.
Vinification
Monitoring ripeness. Selection of the best plots. The grapes are picked, by hand, perfectly ripe. Gentle pressing and cool fermentation (18°C) ensure that all the aromas are preserved. Second fermentation in bottle according to the Méthode Traditionnelle.
Maturing
The bottles are stored on wooden laths in our tufa cellars for a minimum of 42 months before disgorging, to develop an incomparable fine bead.

Tasting notes
De Chanceny Brut Nature has a lovely pale gold colour. The elegant nose reveals initial torrefaction and toasted aromas (bread, brioche). It then opens up with ripe yellow peach, and pineapple notes, chased by hints of spices (liquorice). Elegant and persistent bubbles. In the mouth, the attack has a smooth and lively feel. Nice length on the finish, full of freshness with dried fruit and white flowers aromas.
Food pairing
This sparkling wine is ideal as an aperitif and beyond. It goes as well as an accompaniment to iodized dishes: oysters, grilled langoustines, scallops.
