Story

The wine
Known for its sumptuous colours and acrobatic aerodynamics, the Demoiselle Bleue is a dragonfly that plays an important role in the ecosystem. Very sensitive to the quality of water, it proves how healthy and natural the environment is. Once threatened with extinction, it has become the symbol of a new-found biodiversity and is a protected species in the Loire Valley.
Situation
This cuvée, made from plots in the commune of Montreuil Bellay, in the heart of the Saumur region, has been organic for the past ten years.
Terroir
The 10 hectare vineyard has clay-limestone soil, which is ideal for Cabernet franc. Work in the vineyard is meticulous all year long. The environment, water resources, air, and soil are well-preserved, and biodiversity maintained.
Vinification
The grapes are gently pressed, then undergo brief cold settling to retain maximum aromatic potential. Traditional temperature-controlled fermentation (17-19°C).
Maturing
Aged on its fine lees with regular batonnage for 4 months, bottling and then stored in our 25-metre-deep cellars where the wine ages away from light and variations in temperature.

Serving
Best served chilled (8-10°C).
Tasting notes
Pale pink colour with brillant highlights. Elegant nose with lovely aromas of ripe strawberry and pink grapefruit. On the palate, the wine reveals its greediness and roundness with a soft and fruty finish.
Food pairing
Best served as an aperitif, with delicatessen or grilled meats, red fruit sorbets and fruit salads.
