Chinon Rouge "Le Paradis"

Story

Situation
Chinon is a small picturesque town of 9000 inhabitants, located near the Loire River, in the middle of the Loire Valley. Became Unesco world Heritage in 2001 and is the birthplace of RABELAIS born in year 1484, famous lawyer, doctor, Evangelist and writer “No man can hate the noble wine….”.
Terroir
The vines flourish in shallow sand and gravel soils, which heat up rapidly thanks to good sunshine, resulting in grapes with lovely, fruity potential and soft tannins.
Vinification
The grapes are totally destemmed and fermentation takes place in temperature-controlled stainless steel vats at 24°C. Short maceration (8 days) to extract just the right amount of flavour and tannin.
Varietals
Cabernet franc : 100%

Tasting notes
Beautiful ruby colour with purple highlights. Intense bouquet featuring black-berry fruit (cherry) and violet. Starts off quite round and well-balanced, going on to display soft tannin and long aftertaste.
Food pairing
This red wine goes admirably with delicatessen meats, games, meats (duck, lamb) and soft cheeses.
